Maison Noir was born from a simple conviction: that exceptional dining is not merely about food, but about the entire world created around it. Chef Laurent Dubois brings two decades of Michelin-starred experience to every plate.
Our kitchen sources exclusively from regional farms within 150 miles of Manhattan. The menu changes with the seasons, never with trends. Each dish is conceived as a complete sensory narrative.
We seat just 42 guests per service. This is intentional. Intimacy is not incidental to our philosophy. It is the philosophy itself.

Chef Laurent trained under Alain Ducasse in Paris before earning his first Michelin star at 28 at La Maison Blanche, Lyon. His cooking is grounded in classical French technique and animated by a relentless curiosity about ingredient provenance.
Before founding Maison Noir he spent three years researching fermentation, aging, and preservation methods across Japan, Scandinavia, and the Basque Country. Those influences inform his menus quietly, without spectacle.
He is at the pass for every service. This will not change.
Smart casual to formal attire. Jackets are welcomed and appreciated for gentlemen. We ask guests to dress in a manner befitting the occasion.
We ask guests to arrive within 15 minutes of their reservation. Late arrivals may result in a shortened experience out of respect for fellow diners.
A full tasting menu lasts approximately three to four hours. A la carte dining averages two to two and a half hours.
Reservations are strongly recommended. We accept bookings up to 60 days in advance and hold tables for 15 minutes past the reservation time.
